Description
Mildly spicy, slightly sweet flavor and a thick, rich sauce set Japanese curry apart from other styles. In this version, hours of gentle slow cooking enhance the depth of flavor and the tenderness of the meat. Regular supermarket ingredients make it a snap to shop for (look for the chili sauce alongside ketchup). Though the curry is excellent served over any rice you might have on hand, it’s especially tasty with basmati or jasmine. The recipe is a Yummly original created by The Electrified Cooks.
Ingredients
- nonstick cooking spray (or a little vegetable oil)
- 1 Tbsp. vegetable oil
- 2 lb. beef stew meat (preferably beef chuck, cut into 1-inch pieces)
- 1 tsp. salt (plus more to taste)
- 1/2 tsp. black pepper (preferably freshly ground, plus more to taste)
- 1 can beef broth (14.5 oz. per can)
- 1 onion
- 2 Tbsp. garam masala (divided)
- 1 Tbsp. honey
- 1 tsp. granulated garlic
- 1/2 tsp. ground turmeric
- 1 large sweet potato (orange-fleshed)
- 2 medium carrots
- 1 cup sliced mushrooms (white or brown mushrooms)
- 3 Tbsp. unsalted butter
- 3 Tbsp. all-purpose flour
- 2 Tbsp. chili sauce (slightly sweet and mildly spicy, such as Heinz)
- 1 Tbsp. Worcestershire sauce
- 2 tsp. soy sauce
- 3 cups baby spinach (or baby arugula)
- 2 green onions
- steamed rice (such as basmati, jasmine, or short-grain)
Directions
- Spray a 6-qt. slow cooker with cooking spray. Heat oil in a large nonstick frying pan over medium-high heat. Add half the meat and season with 1/2 tsp. salt and 1/4 tsp. pepper. Cook until browned, turning once, 5-6 minutes total. Transfer browned meat to the slow cooker. Repeat with remaining meat, salt, and pepper.
- Pour beef broth into the frying pan and scrape pan to release browned bits; set aside.
- Dice onion and add to the slow cooker. Add 1 Tbsp. garam masala, the honey, granulated garlic, and turmeric; stir well.
