    Love this! It’s part of our weekly meal rotation and perfect to reheat as leftovers. It’s also a go-to for pot lucks at work. Everyone always asks for the recipe. Great to modify for preferences and dietary needs as well, have done meatless and still tastes great!

    This recipe is a staple in my healthy meal rotation. You can switch up the meat, add more or less cheese depending on your diet (or omit it), make homemade enchilada enchilada sauce or use canned.... I won a healthy cooking contest at work with this recipe! It also freezes fairly well, making it a nice choice for grab and go lunches.

    Cooked really quickly - less than three hrs on high. Added jalapeño and hot salsa really good
