Description
Inspired by the bayous of Louisiana, this shrimp and chorizo gumbo will have you wanting to take the next flight out to New Orleans. Featuring chopped celery, okra, chorizo, and shrimp, this gumbo is warm, savory, and full of flavor. Ready in an hour, this gumbo is a great dinner option on a cold evening. Instructions for preparation are intended for a dutch oven. Serve as is or over steamed rice.

- 125 grams butter
- 60 grams flour
- 1 onion (diced)
- 1 celery stalk (sliced)
- 500 grams okra (halved)
- 30 grams fresh parsley (roughly chopped.)
- 400 grams chorizo (thickly sliced)
- 1 liter fish stock
- 800 grams shrimp (peeled but with tails left on)
- salt
- ground black pepper

Directions
- In a Dutch oven, melt the butter and add the flour to it. Lower the heat and stir constantly until the mixture turns golden.
- Add the onion, celery, and okra. After a few minutes, add the parsley. Stir everything together.
- Add the chorizo and simmer for 5 minutes on low heat.

This is a delicious dish. I'm not a fan of okra so I left it out and it was still very tasty. We used some very large prawns and if you also do that I would suggest cutting the prawns in half. I would do it again.
