- 1 pkg. smoked sausage
- 8 oz. baby carrots
- 3 Tbsp. olive oil
- 1 small red onion (peeled and cut into 8 wedges)
- 2 tsp. chopped rosemary
- 1 tsp. kosher salt
- 1/2 tsp. black pepper
- 1 Honeycrisp apple (medium, cut into 12 wedges)
- 1 lemon (halved)
- 2 Tbsp. chopped parsley
- 8 oz. brussel sprouts (halved lengthwise)

Directions
- Cut sausage in 1/2" bias-cut slices and set aside.
- Place a large baking pan in oven. Preheat oven to 450°F.
- Toss carrots, Brussels sprouts, onion with oil, rosemary, salt, and pepper in a large bowl. Arrange vegetable mixture and sausage on preheated pan in a single layer. Bake in preheated oven until just tender, about 20 minutes.
- Preheat broiler to high. Add apple to pan; broil until apple is tender and vegetables are slightly caramelized, 5 to 6 minutes. Remove pan from oven. Squeeze lemon over pan and sprinkle with parsley.

Amazing, will certainly make again. Reduced Rosemary by 1/2 teaspoon, added fresh chopped basil (2 leaves), and drizzled with aged balsamic.

Really good, I added broccoli, parsnips, and turnips which stretched this into a 2 night meal. This has been added into my monthly meal plan rotation

Quick and Easy! My family and I have never ate sprouts before so to try something different we tried this. It was a hit and will be making this again.

I didn’t see the last part of the directions and did not cook my apples separate may have been better that way. We still enjoyed it though! Yum Yum!!

WOW!! absolutely wonderful! we added sweet potatoes and recommended in prior review and doubled the recipe for a family of four. we had 0 leftovers!

This was really delicious. I also added sweet potatoes and parsnips, cooking them 10 minutes before following the rest of the recipe. I had someone joining us who is allergic to rosemary, so I only used S+P, but next time will try with rosemary. I think this might be good topped with a cheese like Gouda.

I added sweet potato and turnips. I just put them in first for 10 minutes before adding thre rest. It turned out great!

Great meal. I didn't use rosemary or lemon and it was still fabulous. Will definitely be making this a part of our dinner rotation.

This dish was really good. Next time I'll add more apples, probably halfway through the baking process, and also add some kind of squash.

very, very tasty. easy to prepare work minimal ingredients. the apple and sausage ( i used kielbasa) were amazing together. my 20 month old son loved it too.

This turned out great. Had it for dinner tonight. My family loved it. Lots of veggies no complaints like I usually get when I give them veggies. These vegetables tasted good and the apple slices very good. Definitely making this meal again

My wife does 99% of the real cooking in the house. My turn we agreed to do more here (I do other stuff, just been our division of labor) and made with my son. Kids won't touch it, but mom did so I'm happy.. I liked adding some jalepenos and small potatoes.

This was delicious. I also added potatoes. I think that the juices released from the sausages gave the veggies a nice flavor. Will definitely make this again.

This recipe was so good. I don’t have much cooking experience, but this low-cost, easy-to-make meal was so yummy. I substituted broccoli for Brussels sprouts and didn’t put the lemon over it. This was so good I will definitely make it again and use the whole onion. Maybe two cut up potatoes on the side.

Did a play on this recipe, by substituting the apple for potatoes. Quick & easy sheet pan meal. Great served with bread.
*Note: if you like more tender vegetables start them without the sausage 10-15 min. before adding the sausage & cooking as directed.

i had to substitute Sweet Onions and Granny Smith Apples. added a splash of Balsamic and a little thyme
