Description

- 2 Tbsp. balsamic vinegar
- 1/2 tsp. Dijon mustard
- 1/4 tsp. dried thyme leaves
- 1 dash cinnamon
- 4 boneless pork loin chops (about 1-inch thick, 1 1/2 lbs. total)
- 1 tsp. salt (for pork)
- black pepper (to taste, for pork)
- 1 1/2 lb. mixed vegetables (such as broccoli, cauliflower, bell peppers, carrots, and/or zucchini)
- 2 Tbsp. extra virgin olive oil
- 1/2 tsp. salt (for vegetables)

- nonstick cooking spray

Directions
- Place the honey, balsamic vinegar, mustard, thyme leaves, and cinnamon in a gallon-sized zip-top plastic bag.
- Whisk the ingredients together in the bag to combine.
- Pat the pork chops dry with paper towels.

it was just ok, the pork came out a bit dry, but the vegys were delicious.

I used broccoli, green beans, and a separate tray of potatoes... a very filling meal! And the glaze is something I plan to make regularly!

This is a really good merinade. I cooked the chops in the merinade on my sous veide for 3 hrs at 135, then seared in butter. Tender and delicious, especially topped with the extra sauce
