Description
These keto, grain-free breakfast cookies are perfect for prepping in advance and grabbing on busy mornings. The recipe is a Yummly original created by Sara Mellas.
Ingredients

- 1 1/2 cups almond flour
- 3 large eggs
- 1 cup cheddar cheese (finely shredded)
- 1 tsp. baking powder
- 1/2 tsp. salt (scant)
- black pepper (to taste)
- 1 scallion (minced)
- 3 strips bacon (cooked and crumbled, optional)

Directions
- Preheat the oven to 350°F. Line a baking sheet with parchment paper. Set aside.
- Place the almond flour, eggs, cheese, baking powder, salt, and black pepper in a large mixing bowl. Mix with a rubber spatula until combined and stiff. Fold in the scallions and bacon, if using.
- Divide the mixture into 12 mounds on the prepared baking sheet. Use slightly dampened fingers to smooth the edges to be circular, and gently flatten tops of mounds to make cookies 3/4-inch thick.

Decent flavor when you add bacon but thought it needed more seasonings. I will make again and maybe try additional spices.

So good my husband taught himself how to make them. We use 1/2 lb ground sausage, scoop batter with an ice cream size scoop, top with jalapeños from a jar, and bake for 24 minutes.

Unimpressed, unfortunately. I really wanted to like these, and calling it a "savory cookie" made high expectations for maybe a unique texture. It's just a biscuit.

This was so unbelievably good. It turned out so much better than expected. My biggest problem is to limit myself to just one at a time. I will definitely be making this again and again and again.

Not a big hit with my 4yo. That being said, it’s true that it really doesn’t knock you out with flavor, despite the cup of freshly shredded cheddar I threw into it. As for the directions, be prepared that the edges never seemed to get “lightly golden”.

Personally, the flavor wasn't there for me and the almond flour was heavy. I subsituted bacon for ground beef, and maybe that's where I lost some flavor. I also forgot to get Cheddar Cheese so I used Mozzarella insteas. Maybe the Cheddar would've added more flavor as well! However, I'll add all purpose, garlic, and a little more salt and pepper to the ground beef and I think it will be great!

Yummy! I added meatless beef crumbles that had taco seasoning instead of the bacon recommendation.

It came out so good I recommend putting bell peppers super fluffy.

Turned out great! I used all ingredients including optional bacon and scallions (spring onion). I also added some fresh chilli peppers for an extra kick to some of them and that worked out well too

Surprisingly turned out great, I’d agree a little bland but I made it again with bell peppers and oh my goodness so much better!!!

They were not bad, just a little bland for my family's tastes. I also tried sausage instead of bacon. You definitely need the oil from the bacon for flavor and moisture. Next time, I'll use sharp cheddar, bacon and some more seasoning.

A bit dry, but light not dense. I would use less cheese next time. I will make them again.

This recipe turned out great‼️I added some canned salmon for a twist. I also decided not to flatten into a cookie form, so it came out looking more like cheddar biscuits😋 I definitely plan on making these often!

I have made this recipe many times and love it. I make half of the batch with bacon and the other half without since I am vegetarian. Hubby and daughter eat bacon. Also use chopped spinash instead of scallions and it tastes delicious. It is the easiest breakfast recipe and one of our favorites.

Great snack/breakfast with a side of mixed berry yoghurt and a medium roast black coffee. Added lightly toasted sesame seeds to the mix, which complements the scallions.

I made these this afternoon, for tomorrow's breakfast, and we almost had them for dinner! I used turkey bacon, and added a minced portabella. I didn't want to risk the grocery store for one scallion, so I pulled and washed some onion grass bulbs and chopped them instead. We will definitely make these again!

Used pancetta and chives and added a little of the pancetta fat. 350 for 14 minutes and came out perfect.

A little dry at first but I sealed them into a glasslock while steamy and they soaked it up, much better later in the day.
