- 1 bay leaf
- salt
- 2 garlic cloves (finely diced)
- virgin olive oil
- 500 grams clams (cockle)
- 4 oz. wine (Riesling)

Directions
- The night before, cover the beans in cold water and let soak.
- The next day, drain off the water, add the beans to a pot, cover with fresh water, and add the bay leaf. Boil until tender and salt to taste. It will be a faster process if you use a pressure cooker.
- In a skillet, saute the garlic in a drizzle of olive oil until golden.

Dinner for 2, Added sliced grape tomatoes, half onion, 2 cloves garlic diced sauté in olive oil, 1/4 or so white wine ,same for clam juice. Added clams till open, removed and added can of white beans sautéed broth down a few musítese then added arugula tho I think any leaf green would poured over clams.. served with toasted semolina baguette.. The best dinner and easy too.
