- 1/3 cup i can't believe it's not butter! made with olive oil spread
- 2 cups white mushrooms (quartered)
- 1 cup cherry tomatoes
- 1 shallots
- 2 cloves garlic
- 1 tsp. fresh thyme leaves

Directions
- Preheat oven to 425°.
- Arrange cod in shallow roasting pan. Season, if desired, with salt and ground black pepper. Pour half of I Can't Believe It's Not Butter!® made with Olive Oil Spread over cod and turn to coat. Combine remaining ingredients and arrange in pan.
- Roast 20 minutes or until cod flakes with a fork. To serve, arrange cod and roasted vegetables on platter.

Very flavorful and yummy. I seasoned the fish with old bay seasoning. It was delicious.

It was ok. Next time I will try a bit of salt/pepper. Of course wouldn't you know it, I forgot to add the shallots. That's what it was missing! I'll update next time.

I loved this recipe and it will be a regular dish for me! I used ghee instead of their substitute and I used a mix of different types of tomatoes. Mmmmm, Mmmmm good!
