We're trying to improve our roast duck skills. We like rendered fat and crispy skin. This is the best recipe/technique we've tried and will use it going forward. The sides were: cream cheese mashed potatoes with the potatoes cooked in the poaching liquid, and sauteed asparagus with tomatoes. The sauce was a Orange Sauce that had Gran Marnier. Also served fresh made french bread with it. Paired it with a Pino Noir. The duck was a Pekin that we raised.

Excellent roast duck my family absolutely loved it. This is the first time I boiled the duck before roasting. For my sides to complement the duck, I made Sweet and sour red cabbage and German pasta. I estimated the time by the weight of the duck but also used a probe thermometer that has an alarm setting for the internal temperature. I strained the duck fat , when cooled I put it in a glass jar refrigerated it. Herb roasted potatoes in duck fat is heavenly.
