Description
Calling all garlic lovers! Two heads of garlic roast until creamy and mellow before you mash them into a flavorful paste to spread over a wheel of brie. For an easy make-ahead appetizer, feel free to stash the garlic paste in the refrigerator a day or two in advance. At serving time, just spread the garlic on the cheese and bake briefly until warm. The recipe is a Yummly original created by Sara Mellas.

- 2 heads garlic
- 1 tsp. extra-virgin olive oil
- 1/2 tsp. salt
- 1 brie cheese wheel (double-cream, 8 oz. per wheel)
- 2 sprigs fresh rosemary (or thyme)
- crackers (for serving)

Directions
- Preheat the oven to 350°F.
- Remove the papery skins from outside of garlic bulbs. Slice the pointed tops from the bulbs, creating a flat edge that exposes the cloves.
- Cut two square sheets of aluminum foil. Place one bulb of garlic cut-side up in the center of each sheet.
