Great flavor with limited ingredients! Nice when your in a pinch! Next time I will cut the squash in rings instead of cubes. Just a personal preference as it stays juicy without getting mushy (easier if cubed). Pai liked it and agreed with ring cuts. 💕

Trying this one today! I seen some people say it’s lacking flavour, I’m going to try a thick coating of Coconut Milk, Monk Fruit as sweetener, and Xanthan as a thickener. That way it should come out like the Korea Barbecue potatoes, but healthier 🙂

i didn't add any herbs. This was the simplest recipe ever. I cubed the squash, put it in a bowl, tossed with oil and salt, and threw it in the oven. 375 for 40 min made the top soft, and the bottoms crispy and caramelized. They're like little candy. It's delicious!

Yummy, could use a tiny bit more flavor, but easy to make along side the rest of dinner. It doesn't take a lot of fussing with once it's in the oven.

Very good! A tasty way to enjoy butternut squash. I cooked the cubes at 425 for 25 minutes and they were tender & lightly caramelized on the edges. I love sweet potatoes but can’t have them on a low-carb diet, so this was a great substitute.

It turned out great. Made it as a one pan dish with chicken. Next time will need to add some onions.
