  • 2 leeks (trimmed, washed and thinly sliced)
  • 1 1/4 pounds carrots (peeled and sliced)
  • 1 3/4 pounds parsnips (peeled and sliced)
  • 7 tablespoons olive oil
  • 3 pounds roast beef
  • 2 tablespoons wholegrain mustard
  • 1 teaspoon honey
  • 1 bunch parsley (chopped)
  • 1 bunch thyme (chopped)

    Directions

    1. Preheat oven to 350°F. Toss vegetables in 5 tbsp oil, and season. Rub beef with salt and pepper. Heat 2 tbsp oil in a casserole dish and sear beef all over. Place beef on a baking tray and surround with vegetables.
    2. Mix mustard, honey, and half of the chopped herbs. Coat beef with honey mixture. Roast for 35-40 mins. Beef is ready when core temperature is 145°F. Remove from oven and let rest for 10 mins. Serve with vegetables on a platter and garnish with parsley and thyme.
