- 2 cups whole grain rice (previously cooked and cooled)
- 1/2 green bell pepper (finely chopped)
- 1 carrot (finely chopped)
- 3 Tbsp. onion (finely chopped)
- 1 cup edamame (cooked)
- 2 Tbsp. coriander (finely chopped)
- 100 grams feta cheese
- jalapeno peppers (Optional: finely chopped)
- vinaigrette (1 tbsp. or as much as you like)
- 1 lemon
- 2 Tbsp. olive oil
- salt
- pepper

Directions
- Mix the rice, bell pepper, carrots, onion, edamame, coriander, cheese, and jalapeno peppers in a large bowl.
- Mix the lemon juice, olive oil, vinaigrette, salt and pepper in a bowl and mix them together with a whisk.
- Pour the dressing into the bowl with the rice and mix all of the ingredients together.
- Serve immediately or refrigerate for 1 hour before serving.
