Description
Inspired by the flavors of Spain, this recipe for Rice Burgers borrows a page from the book of Spanish paella. Combining arborio rice with peas, onions, and a myriad of spices, these rice burgers can be made as big or small as you like. Substitute your burger patty for one of these tasty vegetarian options at your next cookout or serve them mini style with a yogurt dipping sauce, the choice is yours. Low in calories, these rice burgers are a great alternative to beef burgers.
Ingredients

- 250 grams rice (Oriente Paella, or Paella rice)
- 1 onion (small)
- 2 tomatoes (chopped)
- 250 grams frozen peas
- 1/4 red pepper
- olive oil (to taste)
- 2 tsp. spice mix (paella, or saffron olive oil)
- salt (to taste)
- ground black pepper (to taste)
- 2 eggs
- 4 Tbsp. flour
- margarine (to taste)
- fresh parsley (to taste)

Directions
- Boil the rice in salted water, when half cooked, add the peas.
- When the rice is cooked, remove from heat, pass through a sieve, and wash with cold water to completely remove the gum from the rice.
- In a frying pan, heat a little olive oil, add onion, pepper, and paella spice, and mix well. If you do not have the paella spice, use the saffron so the rice turns yellow.
