I didn’t realize it was for 2 dozen and made 1 dozen. I just thought they rose beautifully and large! They were delicious! I loved the texture and the flavour. I used frozen rhubarb and it didn’t impact the cook time at all. Will be making these again

this is such a tasty way to use rhubarb: I was ready to make one in a cookbook when I realized I was short on white sugar. Searching for a recipe that used (mostly) brown sugar lead me to this one, and a new favourite way to use this tart and tasty fruit. Be sure you dice the rhubarb, as the smaller pieces give wonderful little bursts of tart flavour in contrast to the sweet topping.
