Preheat the oven to 375°F.

Spray a 9x13-inch baking dish with nonstick cooking spray. Set aside.

Scoop the sweet potato flesh from the skins and place in a large mixing bowl, discarding the skins. Add the butter, maple syrup, cream, cinnamon, salt, and pepper. Mash the mixture with a potato masher or mixer until it is smooth and creamy. Add the eggs and stir to combine with the sweet potato mixture until smooth.

Transfer the sweet potato mixture to the prepared baking dish and smooth into an even layer.

Place the pecans and maple syrup in a bowl and stir to coat. Sprinkle the nut mixture evenly over the sweet potatoes. Sprinkle lightly with flaky sea salt, if desired.

Bake the casserole on middle rack of oven until nuts are toasted and dish is gently bubbling at the edges, 30-35 minutes.
