Lentils are also a wonderful meat replacement for vegetarian and vegan meals. We present our rich, earthy, vegan Red Lentil and Mushroom Masala with Coconut Cream.

- 1 cup red lentils
- 2 cups mushrooms
- 1 medium tomato
- 1 onion (medium)
- 2 Tbsp. tomato paste
- 1/2 can coconut cream
- 1 bay leaf
- 1 Tbsp. coriander seeds
- 1/2 Tbsp. Garam Masala
- 1/2 tsp. cumin seeds
- 1/2 tsp. kasuri methi
- 1/2 Tbsp. turmeric
- 1/3 tsp. red chili powder (optional)
- 1/3 cup cilantro
- 1 Tbsp. coconut oil
- 3 cups water (more if necessary)

- ground pepper
