I made this a few years back, but I added half yogurt and half Mayo, and a little extra salt. My son in law loves them. But then I am pretty bad at taking recipes and making them my own by adding and taking away stuff.

I really wanted to like these eggs. My family loves fresh guacamole, and I thought this sounded like a great pairing. I followed the recipe as is for the filling, and it didn't have much flavor. I added a little extra lime juice and salt, hoping that would do the trick, but it just tasted like it was missing something. I salvaged them by adding a couple tablespoons of salsa, but then the filling was runny. Maybe if I got a packet of guacamole seasoning that would help with the flavor, I don't know. It will probably take awhile for me to attempt them again though. :(
