Description
Ras el hanout is a mixture of spices typical of Morocco's cuisine, but also used throughout the Maghreb. It is used to season tagines, couscous, rice and to marinate meat or fish. Every vendor of spices has their own unique version of Ras el hanout and there are mixtures that contain over 30 different spices, with roots and unusual herbs. We present you with a recipe for Ras el hanout seasoning that combines all the best ingredients.

- 1 tsp. coriander seeds
- 1/2 tsp. pink peppercorns
- 1 tsp. mustard (black, grain)
- 1/2 tsp. fennel seed
- 6 cardamom (grains, only the seeds from the inside)
- 2 tsp. sweet paprika
- 1 tsp. tea (turmeric)
- 1/2 tsp. coarse salt
- 1 tsp. cinnamon powder
- 1/2 tsp. brown sugar
- 1/2 tsp. ginger

Directions
- In a skillet, lightly toast on a a low heat, the coriander seeds, pepper, mustard, and fennel to release some of its oil, then place them in a mortar, add the cardamon seeds, and grind everything very well.
- Pass ground spices through a very fine sieve.
- Add paprika, turmeric, salt, cinnamon, sugar, and ginger to this mixture, and grind again until all the spices are well blended.
- Store in a tightly closed glass bottle.
