- 3 oz. ramen noodles (instant, or soba noodles)
- 1 egg
- 3 baby bok choy
- 2 radishes
- 2 tsp. sweet white miso
- 1/2 tsp. soy sauce (or to taste)
- sesame oil (drop of Asian)
- 1 scallion (green part only, thinly sliced)
- 1/4 tsp. crushed red pepper flakes

Turned out great, but the store wa out of radishes 😅. I threw in some imitation crab and cocktail shrimp (I just had on hand), and a shredded “matchstick”-ed carrot. I’m particularly pleased with the egg; I plan to make soft boiled eggs much more often now 😂

This recipe was delicious! We shredded our radishes in the food processor as well as adding some shredded purple cabbage and carrots!

It was pretty good. No complaints really. I used vegetable stock and beef stock but next time I'll use chicken stock instead of beef so the broth doesnt have such a strong flavor
