Description
Made with loads of fresh quince, this Quince Sorbet is a cool refreshing treat to enjoy on a warm day. Lightly flavored with lemon juice, this Quince Sorbet has the perfect balance of sweet and tart flavors. You can prepare the sorbet in an ice cream maker or if you do not have one, this recipe provides instructions on how to prepare the sorbet without the use of an ice cream maker. Low in calories, this is a sorbet you can feel good about eating.

- 1.25 kilograms quince (fresh, peeled and quartered, you can substitute half apples and half pears)
- 280 grams superfine sugar
- 1 liter water
- 2 lemons
- powdered sugar (optionally, optional)
- 1 lemon (optionally, optional)

Directions
- Place the quince into a nonstick pot making sure the seeds and heart are intact. Add the sugar and water and cover. Boil 1 1/2 to 2 hours until the quince is a dark salmon color. You may have to add more water as you boil. Make sure the quince are covered.
- Add the lemon peels and boil 20 more minutes. Remove from heat to let cool.
- Remove the peels and blend the rest together until fine.
