- Beat the eggs in a large bowl
- Add the potato chips and the onion, mix well, and let sit for a few minutes.
- Meanwhile, heat the oil in a skillet on medium heat.
- Add the mix to the skillet and allow to cook for approximately 5 minutes until golden. Flip with the help of a plate and cook on the other side for approximately 5 minutes more. Best results occur if the egg is left a little undercooked.
