- 1 small onion
- 2 large shallots
- 3 cloves garlic (finely chopped or grated)
- 1/4 cup nduja
- 1 1/2 tsp. red chili flakes

- 2 cups kale (packed shredded, stemmed fresh flat, or defrosted/wilted spinach, excess liquid squeezed out in kitchen towel and chopped)
- 2 cups pumpkin puree
- 1 cup cream
- 1 lb. lumache (or large shell pasta, or 500 grams)
- 1 cup grated Parmigiano Reggiano cheese
