This polenta is easy and delicious! I didn’t have sage on hand, so I added 1/2 tsp of poultry seasoning, also used unsalted chicken stock instead of water. Even the kids loved this!

Wonderful. Creamy with the pumpkin adding a savory flavor. I used some Mizithra cheese with the Parmesan cheese.

Solid new side! Doubled the pumpkin for my own tastes but it was good as directed. Ignore the recipe’s 2-3tsps of salt though-one tsp is plenty to start. You can add more if you like!
