- 1 cup butter (melted)
- 1 cup chopped pecans
- 12 oz. caramel topping
- 1/2 gal. vanilla ice cream

- Mix first 5 ingredients and spread onto baking sheet
- Bake at 400F for 15 minutes.
- While hot crumble and let cool.

My Dad had 3 helpings and my daughter said it was the best! I was worried that the baked crumb base wasn't sweet enough so I sprinkled a little powdered sugar over it. I also added some cinnamon to the mixture before baking and sprinkled a little extra cinnamon over the layer of powdered sugar before adding the caramel. I went light on the crumbs and caramel for the top, using them more like a garnish. Next time I'll add more crumbs to the base. Also, as for the ice cream, I used a "creamy" type of vanilla and I stirred it up in a bowl first, which made it easier to spread over the loose crumb base. This recipe was delicious, thank you!
