Description
Casseroles are a great way to pack lots of nutritious meats and vegetables in a meal. They typically are layers of flavors in a cheesy or creamy sauce and baked to perfection. They are a way to show someone you care and they are easy to prepare. The hardest part is waiting for them to come out of the oven. This Potato and Sausage Casserole is a delightful dinner dish.
Ingredients

- 3 potatoes (large)
- 1/4 buttermilk (light, may substitute milk and vinegar)
- 1 tsp. chicken bouillon (powder)
- cooking spray
- 250 grams sausage
- 250 grams mushrooms (sliced)
- 1/2 onion (minced)
- 1 clove garlic (minced)
- cheese
- 100 grams mozzarella
- 1 tsp. parsley (ground)

Directions
- Preheat the oven to 180 Celsius.
- Boil the potatoes in salted water. Drain, leaving in the pan, and mash. Add the buttermilk, chicken bouillon and a little water, if necessary. Set aside.
- Spritz a skillet with cooking spray and saute the sausage, mushrooms, onion, and garlic together. When slightly golden, remove from heat.
- Spray a baking dish with cooking spray. Spread half of the mashed potatoes into the bottom of the pan. Top with the sausage mixture and cover with the rest of the mashed potatoes. Sprinkle with parsley.
- Bake for 15 minutes, until the cheese melts and browns slightly.
