- 1/4 cup olive oil
- 3 red bell peppers (stem and seeds removed, thinly sliced)
- 1 onion (large yellow or cooking, peeled, halved, and thinly sliced)
- 10 cloves garlic (peeled and thinly sliced)
- 1/2 tsp. crushed red pepper flakes
- 1 Tbsp. chili powder
- 1 tsp. paprika (smoked or 'regular')
- 2 whole jalapeno peppers (washed and pierced several times with a sharp knife)
- 1 can fire-roasted diced tomatoes (14.5 ounces)
- 1 can tomatoes (whole, in juice 28 ounces)
- 4 stems fresh basil (with the leaves plus extra for garnish)
- 4 stems fresh oregano (with the leaves plus extra for garnish)
- 6 large eggs
- 3/4 cup ricotta cheese
- 1 cup cheddar cheese (grated)
- 1/4 cup grated Parmesan cheese
- kosher salt
- black pepper
- rustic bread (drizzled with olive oil and toasted in a pan or on a grill)
- kalamata (or other good olives)
- radishes (fresh)
- softened butter
- sea salt
- clementines (or orange segments)

Boy that’s good!
The sauce is very versatile and you definitely want to have good crusty bread 🥖.
The only thing I did differently was I used a can of already crushed tomatoes rather than crushing a can of whole tomatoes with my hands.

Excellent! I don’t give out many five-star reviews but this dish was amazing. Notes: I used about a teaspoon rather than a tablespoon of chili powder. Also, would recommend not using the liquid from the can of whole tomatoes. I had to spoon off the liquid before adding the ricotta and eggs.

Turned out wonderful! I grocery shopped with the intention of making this for one of the meals this week, and the boyfriend kept choosing other options till I finally told him, “I’m making this tonight, you don’t get a say.” And the boyfriend went back for THIRDS! I didn’t do olives for garnish though because we recently had Moroccan chicken with kalamata olives and overdid it with that dish.

Excellent! Will make again. After we pulled out the pierced jalapeños, we threw them on the oven rack to roast them. Delicious!!
Will add garlic salt to the oiled and toasted French bread.
Topped ours w halved Kalmata olives as garnish as well.
Perfect dish to make for a brunch when expecting company!
Make the sauce ahead of time. Heat up prior to their arrival, add eggs, cheese and bake. I would believe the sauce could even be frozen and saved for a later date during the week for dinner.
