- 2 lb. pork tenderloin (trimmed of silver skin and excess fat, cut into 1" cubes)
- 2 lemons (juiced)
- 1/2 cup olive oil
- 5 garlic cloves (minced)
- 3 Tbsp. red wine vinegar
- 1 Tbsp. dried oregano
- 1 tsp. dried thyme
- 1 tsp. kosher salt
- 1/2 tsp. fresh ground black pepper
- 1 1/2 cups plain greek yogurt (I like full fat but you can use low fat or no-fat)
- 3 garlic cloves (finely minced)
- 2 Tbsp. extra virgin olive oil
- 1 Tbsp. white vinegar
- 2 Tbsp. fresh dill (chopped)
- 1/2 tsp. kosher salt
- 1/8 tsp. black pepper
- 2 cups cucumber (grated, I used about 1 medium, you can leave the peel on})
- 1/2 English cucumber (diced)
- 2 cups cherry tomatoes (halved, quarter the tomatoes if they are larger)
- 1/2 cup pitted kalamata olives (cut in half)
- 1/4 cup fresh mint (chopped)
- 1/4 cup fresh parsley, chopped
- 1 tsp. dried oregano
- 1/2 cup crumbled feta cheese
- 3 Tbsp. lemon juice
- 2 Tbsp. extra virgin olive oil
