Return the skillet to the stove over medium heat and add the oil. Add the chopped onions, dried oregano, mustard, garlic, salt, and pepper, and cook, stirring occasionally, until the onions are tender.

Use a mandoline or a knife to cut the potatoes into 1/4-inch thick slices.

Arrange the browned pork chops over the potatoes.

Place the cream of mushroom soup, milk, salt, and pepper in a medium mixing bowl and whisk to combine.
