- 100 grams mature cheddar (extra, coarsely grated)
- 75 grams chorizo (finely diced)
- 1 chilli (small jalapeño, finely diced)
- 2 spring onions (finely chopped)
- 1 handful coriander (roughly torn)
- semolina (or flour, for dusting)
