- 150 grams raw pistachios (ground, grind in a blender on pulse)
- 50 grams ground almonds
- 100 grams plain flour (blend, with no xanthan gum I use Gluten Free Alchemist Blend A – See Notes – OR sub with fine ground polenta)
- 1 1/2 tsp. gluten (baking powder, free as required)
- 160 mL olive oil (good quality)
- 200 grams golden caster sugar
- 3 large eggs (UK large, Canadian ‘Extra Large’; Australian ‘Jumbo’; and US ‘Extra or Very Large’)
- 2 limes (– zest finely grated)
- 1 lime juice
- 2 limes juice (use juice from the 2 zested limes used for sponge)
- 10 grams blackcurrant (freeze dried, powder see NOTES)
- 50 grams icing sugar
- 1 lime juice
- 70 grams caster sugar
- 1 tsp. blackcurrant (freeze-dried, powder see NOTES)

- 3/4 Tbsp. pistachios (chopped/I used Iranian slivered pistachios – to decorate)
