- 1/3 cup sugar (if you like your muffins sweeter, increase this to 1/2 cup)
- 1 1/2 tsp. baking soda
- 1/2 tsp. salt
- 8 oz. crushed pineapple (drained)
- 1 mango (large ripe, important that it is ripe and sweet, pitted, peeled and diced)
- 8 oz. vanilla yogurt (or plain, I used Greek yogurt)
- 2 eggs
- 1/2 cup canola oil
- 1 Tbsp. muffin (top of, if desired)
