Description
Requiring just four simple ingredients, this recipe for pickled feta cheese is easy to make and makes a great topping for hot or cold salads, pasta, or pizza and it makes a great addition addition to wraps or tacos. Seasoned with fresh lemon zest and thyme leaves, the feta cheese cubes need at least two weeks to marinate in the infused olive oil before they are ready to serve. Store the pickled feta cheese in the refrigerator.

- 200 grams feta cheese
- 1 lemon peel
- 10 thyme sprigs (lemon)
- olive oil (homemade flavored, or olive oil, to taste)

Directions
- Cut the cheese in equal sized cubes, and put them in a dated, sterilized jar.
- Add lemon zest and fresh thyme leaves.
- Fill with olive oil, and close the bottle. Allow the cheese to marinate for at least two weeks.
- Store in the refrigerator.
- Use in salads, bruschetta, or a simple pasta
