- 1 whole duck (about 1.8kg)
- 1 1/2 Tbsp. honey
- 3 Tbsp. black soy sauce
- 4 Tbsp. sea salt
- 1 Tbsp. baking powder
- 1 Tbsp. five spice powder
- 1 1/2 Tbsp. sea salt
- 4 sprigs spring onion (cut into half)
- 10 slices ginger (thinly cut)
- 2 cups all purpose flour
- 2/3 cup boiling water
- 1 1/2 Tbsp. sesame oil
- 1 btl. hoisin sauce (combine 1/3 sauce with 1 tablespoon of water)
- 1 whole cucumber (Divide into 3 sections, de-seed and cut into thin long strips.)
- 5 sprigs spring onions (Cut into 5cm long pieces and slice finely longways.)
