- 1 cup rotini (or other similarly shaped pasta)
- 3/4 cup broccoli florets
- 1 zucchini (small, diced)
- 1 stalk celery (chopped)
- 2 Tbsp. parsley (minced)
- 2 Tbsp. olive oil
- 1 Tbsp. light sour cream
- 1 lemon
- salt and ground black pepper

Directions
- Cover the broccoli and zucchini with water and cook for 2 minutes. Drain, rinse with cold water, and pat dry with a paper towel.
- Prepare the pasta al dente, following the directions on the package. Drain, rinse with cold water, and set aside.
- Whisk the olive oil, cream, lemon juice, and rind together in a small bowl. Taste for seasoning and add salt and pepper if needed.
- Mix the pasta, vegetables, parsley, and dressing together in a salad bowl.
