Description
With a crispy crust and infusion of saffron, paella is always a showstopper. But when Andrew adds an untraditional ingredient to the mix, you've got a guaranteed crowd-pleaser on your hands.

- 2 Tbsp. hot water
- 1/4 tsp. saffron
- 1 yellow onion
- 1/2 lb. Spanish chorizo sausage
- 1/4 cup olive oil
- 1 Tbsp. oregano
- 1 Tbsp. smoked Spanish paprika (also known as pimentón)
- 1/2 tsp. cayenne pepper
- 2 garlic cloves
- 1 1/2 cups Spanish paella rice (ex: La Bomba brand)
- 1/2 cup dry white wine
- 4 cups chicken stock (or shellfish stock, for first addition)
- 12 oz. canned chopped tomatoes
- 1 lb. wild caught head-on shrimp (U/12 (under 12 shrimp per pound) recommended, brought to room temperature)
- 22 littleneck clams (or cherrystone clams, brought to room temperature)
- 1 cup chicken stock (or shellfish stock, for second addition)
- 1 cup frozen peas (defrosted)
- freshly ground black pepper
- 2 Tbsp. chopped parsley
- 1/2 lemon (zested, for garnish, optional)
