- 1 lb. shrimp shells (removed and deveined if needed)

- 1 cup chinese chives
- 1 cup bean sprouts (fresh)

This was very good, I think my best attempt at Pad Thai so far. I soaked the noodles in hot water rather than cold as the package said to and I've had undercooked noodles in previous attempts. I did take the peanut butter option which I think softened the tartness of this dish. I will attempt to make this again and hope for the same results.

This is absolutely one my favorite dishes to prepare! I often prepare this for company bc it plates well, but it is so easy to make. If you like pad Thai, then this dish is for you!
