Description

- 1 stalk celery
- 2 large carrots
- 4 lb. bone-in beef short ribs (cut into 3-inch pieces)
- 1 tsp. salt (plus more to taste)
- 1/2 tsp. black pepper (preferably freshly ground, plus more to taste)
- 2 Tbsp. extra-virgin olive oil
- 1 Tbsp. chopped fresh thyme (divided, plus thyme sprigs for serving)
- 1 cup dry red wine
- 2 cups beef broth
- mashed potatoes (or steamed rice, for serving)

Directions
- Preheat oven to 350°F.
- Chop onion and celery. Peel carrots, cut in half lengthwise, then slice crosswise about 1/2 inch thick.
- Season short ribs all over with 1 tsp. salt and 1/2 tsp. pepper.
