Description
Rosemary, garlic, thyme, and bay leaves season these oven-baked potatoes for a delicious side-dish. Baking them in the oven gives them a nice little crisp on the outside, while the inside stays pillowy and hot. These best part of this dish? It is so easy to prepare and once the potatoes are in the oven it is largely hands-off.

- 1 kg potatoes (ratte)
- 3 garlic cloves (unpeeled)
- thyme
- rosemary
- bay leaves
- olive oil
- sea salt

Directions
- Preheat oven to 425 degrees Fahrenheit.
- Wash the potatoes and dry them well. Arrange them on large enough baking pan so they do not overlap. Add the garlic and herbs. Sprinkle generously with olive oil. Add salt. Mix well so the potatoes are coated with the mixture. Bake for 30 minutes, stirring occasionally. If the potatoes begin drying out, cover the dish with aluminium foil.
