I am not one to go for Mexican anything but wanted to give this a try. Was a bit spicy for me but it was really good and I will make again. I skipped cilantro because I don't like it, used chicken broth because that is what I had. 1/2 tsp red pepper flakes. I added pork sausage with the ground beef so mine was pretty meaty. Otherwise I followed the recipe.

Our family loved this recipe.The only changes I made was I used pinto beans an stewed tomato's an instead of veg.broth I used chicken broth

Great dish!! I forgot to put the salsa in and used red beans instead of black beans (I didn’t have black beans) but it was still yummy. I will definitely make this again.

I usually make the rice separately for these type of ‘one-pot’ rice recipes. Today I forgot that’s something I do, and, yeah, like others I had to add a significant amount more of broth and cook it a great deal longer before the rice was fully cooked. The flavour was good in my opinion, though I added a bit more taco seasoning than it called for. We ate it with tortilla chips, almost like a dip, and it was quite good! Decent recipe that just needs a bit of tweaking.

Definitely need to add more liquid I added the liquid from the beans and the broth, but it still needs another 1/2 to 1 cup of liquid

Very easy to prepare, I followed exact recipe. Was a bit bland for my family but an easy remedy would to use a spicer taco mix and rotell.

Big hit at our house. I recommend doubling or tripling the amount of liquid so you don’t end up with crunchy rice. Can’t wait to use leftovers for tacos!

My husband and grandkids weren't very excited about this casserole. I did not have to add any extra water to it. I thought it was good.

Had to add a bit of extra water, but other than that came out great. Might go with slightly less cheese when I make it again, other than that everything was well proportioned.

Both of us really liked it. However, it burned to my pot. About 1/4 was inedible. Possibly my meat was too lean. There was only 1 cup of broth and very little juice in the Rotel. Next time before adding the rice I will strain what’s in the pot to make sure the liquid to rice ratio is correct. The flavor was great! I will make this again. Thank heavens I made it in a non-stick pot.

I needed to add another cup of water because the rice wasn’t getting done. Pretty tasty though

Turned out great, was pretty easy to make too. Hardest part is the prep and waiting for the rice to fully cook. You should probably soak it before cooking.

my guys loved it. made it with minute rice, and a pound and a half burger, with 2 taco seasoning packs. it was great!!

Easy and delicious Mexican dish. I cooked the rice in advance to speed up cooking time and used ground chicken since one person doesn’t eat beef. Used lots of cheese on top. Turned out well.

I cooked everything together in one pot minus the cheese and lime. After serving used all other items as topping—-lime, cheese, tomato, cilantro, sour cream, and avocado to individual’s liking.

this dish was so simple and easy. well... i literally just realized i forgot the black beans, but it really doesn’t use all that many ingredients! i made my own taco seasoning and through this recipe i have learned that i love cumin. i can imagine it reheating very easily and it’s just a really easy mexican casserole you can eat with tortilla chips or just throw it in a tortilla as a burrito. don’t be afraid to add more cheese!!!

It was tasty! Added green pepper for more veggies. Would’ve been 5 stars but I had to make up my own taco seasoning. When there’s a packaged product there needs to be a homemade option.

Bit spicy for the kids but next time I’ll just add more lime juice to their bowls.
I love it. Used mozzarella cheese instead, fancy green beans instead of the other beans, lime juice instead of lime and jasmine rice.
Mostly because I didn’t have the other ingredients.
Would be great with sour cream and in a burrito.
Will be making again.

That one pot meal served the 4 of us with leftovers to spare! I cooked the rice separately. I read what some reviewers said that the rice took a long time to cook when combined.

Have made this recipe twice in 2 weeks. My husband and I love it! Everything gets cooked in one pot so there's not a million dishes to clean up afterwards. It's so easy and quick to make. I use ground turkey instead of ground beef and it tasted amazing! Lots of flavor and the recipe makes enough for us to have 3 meals each. I would suggest getting some spicy salsa to add to the top instead of tomatoes. I also like making or buying tortilla chips to eat this with.

This is the new family favorite. The whole family LOVED it, especially the kid that hates rice. It’s been 5 days and the kids want it again tonight. I left the beans out, but putting them in next time. I also added a bit more broth.
