- 4 Tbsp. butter (divided)
- 1 pinch salt (very small amount - but if using low sodium stock or unsalted butter, ok to use a little more salt)
- 4 chicken thighs (bones removed, skinless or with skin OK)
- 10 cloves garlic (6-10 cloves, sliced in half or finely diced, I like big chunks of garlic but realize most don't)
- 8 oz. cremini mushrooms (stems removed and wiped clean)
- 1 cup chicken stock
- 1 Tbsp. red pepper flakes
- 1/2 cup cilantro (diced, optional)
- 2 Tbsp. lemon juice
- 1/4 cup Parmesan cheese

Decent flavors but the sauce was watery and I think it needed more seasoning.

Very good and easy to make.

Great main dish today. Only change was I added onions. I let the dish simmer until it achieved a sauce consistency. My bride of 55 years approved.
