- 1 tsp. ground cumin
- 1 tsp. curry powder
- 1/2 tsp. smoked paprika (or regular paprika)
- 1 pinch cayenne (optional)
- 3 Tbsp. tomato paste
- 30 oz. diced fire roasted tomatoes
- 1 cup vegetable broth
- 15 oz. chickpeas (drained and rinsed)
- 3/4 cup unsweetened coconut milk
- brown basmati rice

It was awesome. I made these changes:
1. Only used 1 jalapeño
2. Used 2 tbl fresh ginger (seemed less than 4in)
3. Used 4 large garlic cloves
4. Didn’t have curry powder so instead I used:
- 1/2 tsp coriander
- 1/4 tsp nutmeg
- 1/8 (or large pinch) cinnamon
5. Used Hunt’s brand fire roasted tomatoes
6. Used fresh cilantro
7. Don’t think the brands of vegetable broth (great value), chickpeas (great value), tomato paste (great value) or coconut milk (imperial dragon) matters
8. Fresh cilantro as a garnish was nice
9. Used regular long grain white rice instead of basmati (earth grains brand)
