Delicious! I made a couple substitutions based on the ingredients I had on hand. I used onions and bell peppers then substituted a Japanese mixed hot pepper spice for the jalapeño and cayenne. I used two sweet potatoes because I really like sweet potatoes, and I substituted spinach for the collards because I had a ton of spinach and no collards. I cooked it in my instant pot for 15 minutes then used an immersion blender to make the whole thing creamy. Served it over rice, then ate a little more on its own, because it was so good. I live alone, so I’m going to have to freeze some. I think it will be fine. Thanks for the recipe!

This stew is so good yet so simple to make I’ve made it several times and the whole family loves it. The flavors are warm and comforting.

Honestly, something about this recipe just made my soul happy! It was enjoyable to make, and I couldn't get enough to eat! My bowl got a lot of extra lime juice. I've never really taken garnishes seriously and have left them out of most recipes. I included everything this time, and not only did it look gorgeous, it was delicious! I might add a little more peanut butter next time too!

This recipe is so easy and delicious. You just prep all of it and throw it in the pot. I didn’t have unsweetened peanut butter but it didn’t seem to matter using regular peanut butter. My husband is on weight watchers so he appreciated the low points and no meat.

This is a new favorite for sure! Hearty comfort food with tons of flavor. Love how pretty this looks in the bowl with the rice and garnish. It impressed the people I shared it with for sure.

Lovely recipe that the whole family enjoyed! I added a dash of black pepper, cardamon, and cinnamon for flavor. Chick peas can be added for additional protein. I also subbed spinach for the collard greens. Overall a satisfying vegan dish!
