- 10 oz. red enchilada sauce (Old El Paso)
- 1/2 cup chunky salsa
- 1/4 cup water
- 4 tortillas (6-inch Old El Paso soft, cut into 1-inch strips, pizza cutter works great for this)
- 1 cup mexican blend cheese (shredded)
- 1/2 cup sour cream

This is such a winner and great for weeknight deliciousness. Used Quorn chicken fillets I made ahead of time (diced) and added a can of beans (black or kidney). Used sharp cheddar and mozzarella. Topped with some plain Greek yogurt and shredded lettuce.

Very good! I added corn and black beans and made my own enchilada sauce. This has been added to my Fiesta Friday Collection!

I didnt follow the measurements closely. I went heavier on everything and added a can of black beans, rinsed and drained, and a bit of frozen corn kernals, and a can of sliced black olives, drained. phenominal and so easy to tweak!

Smaller tortillas strips next time. Added olives. Fresh guacamole. Yum!

This was good. Not as quick as the recipe states because I had to prepare and shred the chicken. I doubled the amount of cumin, because I felt this was going to give the dish its flavor. I also added slightly more oregano and diced an onion, a clove of garlic and half a red bell pepper, and sauteed them together before adding the chicken. I used 8 corn tortillas, to make this gluten free. I will probably make it again and tweak it even more.

Very good!! I think I'd use 6 tortillas and sneak in some onions and bell peppers next time.

This was SO GOOD!! I was looking for something quick and easy that I had all of the ingredients for & this met all those goals! My kids and I all cleaned our plates!! I’ll definitely make this again!

It did taste like chicken enchiladas. All the extras are needed to have enough taste, the green onion, guacamole, sour cream. I will probably make it again.

This was a huge hit with my whole family. I'm gluten free, so I pulled some of the sauce out before adding the tortillas and served that over rice. Everyone said they would like to see this again.

Very good, especially the taste of the tortillas after simmering in the sauce, and definitely easier than conventional enchiladas.

It was okay it was fast I would’ve sautéed onion, bell pepper at the beginning too. Could’ve been spicier so maybe hotter sauce or salsa. But not bad for a uncle meal

Good solid meal. I did everything it said except the tortillas since I don't like soggy tortillas and instead used it as a quesadilla filling. Will definitely make again
I made this again a year later following the instructions and it was still a great meal. I did add corn and pinto beans to it because the only salsa i had was smooth and i wanted more texture.

really good!! it's a different twist on enchiladas instead of eating them the same way, quick and easy meal. I of course used corn tortillas and fried them first then cut them in triangles and added them to the mixture.

This is one of the best Mexican food dishes I have ever made. I substituted flour tortillas with corn instead and added some red pepper and tomato. So very good.

Easy and delicious! I sautéd bell pepper and onion before adding the chicken, Topped with some shredded lettuce, guac and sour cream.

This worked out wonderfully, I could see adding beans or rice but for a first try it was very delicious

Tasted great, but I think I may substitute rice for the tortillas. The texture of it was kind of different. Still a good recipe!!
