- 1 cup mango (jarred, pieces, chopped, Del Monte makes a 20-ounce jar found refrigerated in the produce section of most supermarkets)
- 1 cup juice (from the jarred mangoes)
- 8 figs (plump soft, stems removed and chopped fine)
- 2 whole eggs (beaten)
- 1 1/2 cups buttermilk
- 1/2 cup vegetable oil
- 1/2 tsp. vanilla extract
- 2 cups oat flour (Bob’s Red Mill is the brand we used)
- 1 cup quick oats (Irish, We used McCann’s Quick & Easy Irish Oatmeal)
- 1 Tbsp. brown sugar
- 1/4 tsp. salt
- 4 tsp. baking powder (1 tablespoon and 1 teaspoon)
- 1 cup heavy cream (whipped to serve over top, optional)
