Description
You and your loved one want a decadent dish that is low in calories, but packed with flavor. This recipe for Nopal Pasta takes 30 minutes to prepare and will warm your heart and tantalize the taste buds. Ingredients include short pasta of your choice, olive oil, onions, cooked nopales, green salsa verde made with persimmons, and feta cheese. With only 250 calories per serving, you might want to make extra.

- 1 1/2 cups short pasta
- 1 Tbsp. olive oil
- 1/2 onion (cut into halves)
- 1 cup nopal (cooked)
- 1/2 cup salsa verde (“green sauce”, made with persimmons)
- feta cheese

Directions
- Cook the pasta, preferably al dente. Set aside 1/3 of the water used to cook the pasta.
- In a medium sized casserole heat up the cooking oil and sauté the onions. When the onions begin to turn a bit brown, add the nopal and let them cook for 3-5 minutes.
- Add the cooked pasta, the sauce, and the water that was set aside onto the casserole. Let everything cook for 2 minutes so that the flavors can mix completely.
- The pasta is then served with feta cheese on top.

What an excellent little snack this makes, I added ground turkey, two tablespoons of chorizo from my supermarkets butcher and added half a pack of taco seasoning mix. Delicious and filling meal for a rainy day
