- 75 grams cocoa powder (use the smaller amount for milk chocolate and the larger for dark)
- 1/4 tsp. kosher salt
- 1/4 tsp. xanthan gum
- 480 grams heavy whipping cream
- 1 tsp. vanilla extract
- 2 Tbsp. vodka (brandy or booze of choice ****optional)

So so good! I made mine in the ice cream maker (didn't heat it and didn't whip the cream first, though I did mix everything up well with a stick blender before adding it to my ice cream maker) with 100g of allulose and 50 drops of liquid stevia (seems like a lot but things taste less sweet when frozen). Also used half and half instead of coconut milk. Best. Ice Cream. Ever!!!
Update: I just made the most delicious pumpkin ice cream by substituting 1 cup of canned organic pumpkin for the cocoa and adding 1/2 t cinnamon, 1/8 t ground cloves, 1/2 t ground ginger and a pinch of nutmeg. Everything else is the same as for the chocolate ice cream with the exception of using bourbon instead of vodka.
