- 2 ribs (celery, chopped)
- 1 red onion (medium, diced)
- 3 bell peppers (small, combination of green, red, yellow, orange, chopped)
- 1 jalapeno (cored, seeded and diced)
- 4 cloves garlic (pressed or minced)
- salt
- pepper
- 2 boneless skinless chicken breasts (cut into bite-sized pieces)
- 14 oz. smoked sausage (Eckrich, sliced)
- 3 cups chicken broth
- 28 oz. crushed tomatoes
- 2 cups long grain rice
- spice blend (Homemade Cajun, see ingredients below)
- 1 lb. raw shrimp (deveined and tail removed)
- 1 1/4 cups okra
- green onions (Optional garnishes: and fresh parsley leaves)
- 1 tsp. paprika
- 1 1/2 tsp. sea salt
- 1 tsp. black pepper
- 1 tsp. dried oregano
- 1/4 tsp. dried thyme
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1 tsp. cayenne pepper (or less if you don’t like spicy foods!)

Great recipe, and good directions. Took time to prep, but was worth it. Not a fan of ocra, so left that out, and halved the recommended amount of cayenne. Still had enough of a kick to please me without burning me at the same time. I'm going to have to find a deserving cornbread recipe to go with it.

Being Fat Tuesday.. I knew I wanted something from New Orleans.. This Jambalaya was perfection.
Had to tone down the heat a little, some of the family wasn't built for the heat, lol
other than that, I stayed true to the tradition..will be doing this againthanks.

Everyone loved it,awesome, after adding the rice,shrimp and okra I baked it at 350 for 25 minutes, came out perfect.

I overcooked the rice a bit but it still turned out great! The spice mix was perfect!!! I left out the celery and okra since I am not a fan, but it still came out super spicy and delicious! Will definitely be using this recipe in the future.
