Description
This recipe is courtesy of Kit Graham. This mushroom stuffed pork tenderloin is an elegant but easy to prepare meal that can be made in just about an hour.
Ingredients

- 2 lb. pork tenderloin (either one large tenderloin or two smaller)
- 3 Tbsp. butter
- 1 1/2 lb. button mushrooms (or Cremini, sliced)
- salt
- pepper
- 2 shallots (chopped)
- 4 cloves garlic (minced)
- 2 Tbsp. fresh thyme
- 2 cups white wine (such as Sauvignon Blanc)
- 1/4 cup blue cheese (crumbled)
- 1 Tbsp. stone ground mustard
- 1 Tbsp. olive oil
- 1 cup chicken broth

Directions
- Start by prepping the pork. Carefully slice halfway through the middle of the tenderloin and fold it open. Then use a meat mallet to pound out the meat. Pound it until it has an even thickness, getting it as thin as you can. Season both sides generously with salt and pepper, and set aside.
- Heat your oven to 375 degrees.
- Melt 2 tablespoons of butter in a dutch oven over medium heat. Once melted, add the shallot and saute for 2 minutes. Then add the garlic, mushrooms, and 1 tablespoon thyme. Season generously with salt and pepper, and let cook for 5 minutes. Then add 1 cup white wine and continue cooking until the liquid has been absorbed.

It's good recipe but it does not take into count the dutch oven for cooking time. And that's a hard one because there are so many varieties. But 15 minutes with a covered DO takes a while to come to heat... Just sharing a small tid-bit.

Excellent! I only had 8 ounces of mushrooms and found that to be enough.
