- 1/2 cup green olives (minced)
- 1/2 cup black olives (sliced)
- 1 tomato (diced)
- 1 tsp. minced garlic
- 1 tsp. fresh basil (minced)
- 1 tsp. ground black pepper
- 2 cups rotini (or other similarly shaped pasta, cooked)
- 1 slice smoked turkey breast
- 3 slices salami
- cooking spray
- Parmesan cheese (grated)
- mozzarella cheese (grated)
- 3 Tbsp. parsley (minced)

Directions
- Mix together the green and black olives, tomato, garlic, basil, and pepper and set aside to marinate for at least 2 hours.
- Cut the turkey and salami into pieces and saute in a skillet spritzed with cooking spray until lightly golden. Add a cup of olive salad and the pasta. Stir and cook until the pasta is heated.
- Remove from heat and place onto serving dishes.
- Sprinkle with the parmesan, mozzarella, and parsley.
